Cuppers evaluate coffee with a simple method: grind, add hot water, wait four minutes, break the crust and smell. Then, with a deep spoon, slurp sharply so the coffee sprays across the whole tongue.
Look for four things in turn: aroma, acidity, sweetness and body. Acidity is not sourness; it is the brightness that makes a cup feel alive, like the snap of a fresh apple.
Do not worry about naming flavours exactly. Say what comes to mind first: stone fruit, toast, tea, honey. Over time your vocabulary will grow, and so will your pleasure.
